It is important not to underestimate the importance of siesta here. Everything slows to a standstill in the afternoon. If you visited a village in the afternoon you would think it was empty, just a few dogs flopped in the shade. However a few hours later and it is a very different situation - and of course in the early hours of the morning things are just warming up.
